CHEESE CLASSES

All cheese classes include mini kit, instructions and cultures to make your own at home.

All Gabriola classes start at 10.30 and run to 2.30 and include lunch and wine unless otherwise stated.

 

Mozzarella / Chevre

This course introduces you to the art of making your own fresh cheeses starting with an understanding of the ingredients used to make a variety of cheeses.

 

You will be making and taking home your own chevre' and making homemade, hand stretched mozzarella.

Cultures and ingredients to make their own at home are included.

 

Course runs approximately 3.5 hours.

Lunch and wine paired to cheeses included.

Hard Cheeses / Neufchatel

This class extends basic knowledge of cheese making and explores varieties of hard, pressed cheese.

 

The class chooses making 1 of the following: Colby, Gruyere, Jarlsburg, Asiago, Havarti or Gouda. Instructions and ingredients to make thier own cheeses at home are included. After ripening, cheeses made in class are waxed and given back.

 

Course runs approximately 4 hours.

Lunch and wine paired to cheeses included.

Discover Cheeses

This course is designed for those interested in a one day cheese making workshop that will encompass a variety of soft, pressed and advanced cheese making techniques including: sour cream, cream cheese, bousin, ricotta, mozzarella, Neufchatel, soft chevre', cottage cheese, feta, panir farm house ceddar. Students will take home ingredients to make their own at home.

 

Course runs approximately 6 hours.

Lunch and wine paired to cheeses included.

 

Dates: Sept 19, Oct 7, Nov 25, Jan 13, Feb 24, Mar 9

Time: 10:00 - 5:00

Cost: $250



Cheese Plate

Learn how to make and create the following cheeses: Mozzarella log, chevre', butter, boursin, Neufchatel, sour cream and cream cheese.

 

Course runs approximately 4 hours.

Lunch and wine paired to cheeses included.

 

Dates: Sept 9, Oct 10 & 14, Nov 21, Dec 13 & 23, Jan 2, Feb 27, Mar 5

Time: 10:30 - 2:30

Cost: $140

Brie or Cambozola / Neufchatel

Students will explore the different types of cultures used in making advanced cheeses as well as the ripening techniques in making Brie, camembert and cambozola. Students will take home homework.

Brie only includes cultures to make your own at home

 

Course runs approximately 4 hours.

Lunch and wine paired to cheeses included.
